I love banana bread. It’s one of the easiest things to make, and it makes me feel all warm and fuzzy inside when I make it-partly because it smells like fall-time and love. When I used to live in Flagstaff this is what I would fill my fall making. I would make tiny loaves and bring them to people in the ceramics studio-little personal banana bread loaves. It always made people smile, which makes me happy.
The base recipe I found online, but have altered it so much that it doesn’t really resemble the recipe, except to say that it’s banana bread. I love it though, partly because I have taken out the butter and replaced it with olive oil, and added some spices that I think add to it.
Recipe: Banana Walnut Bread
2 1/4 c. flour
1 tsp baking soda
1/4 tsp salt
4 overripe bananas-or 2 cups mushed banana*
1/4 c. apple sauce*
1/2 c. olive oil
3/4 c. brown sugar
1/2 tsp vanilla
1/4 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp cloves
1 c. walnuts, chopped**
Stir together the eggs, oil, brown sugar, vanilla, and spices. Add in the mashed bananas and apple sauce. Once everything is pretty well mixed together, add the flour, baking soda, and salt, just until incorporated. Do not over mix the batter, or else your bread will become dense. Fold in the chopped walnuts.
Preheat the oven to 350 degrees. Pour batter into a greased loaf pan, or lined muffin tins. Bake for 30-60 minutes, or until a toothpick inserted in the middle comes out clean.
Let sit in the loaf pan for about 15 or 20 minutes before inverting it onto a cooling rack. Serve with butter, sit back, and enjoy the taste of fall.
*I usually get 4 bananas and if they do not measure up to 2 cups after I mash them then I just add applesauce until I have 2 1/4 c. of the both together. Or, if there is too much banana then I just don’t add as much applesauce. It is always different, but always turns out fantastic!
**Other delicious things to add instead (or in addition to) walnut that people have loved in the past: sunflower seeds, pecans, raisins, craisins, chocolate chips (only one person liked this, but he almost has a heart attack from joy when he realized there were chocolate chips in there)-really whatever you can think of you can throw on in there!
