One thing that is always interesting about being home is you never know when you’ll see a bear! We used to see them all the time when we built the house, as there used to be a bear trail between our house and the neighbors. He was fun to watch before going to school! After about 5 minutes hanging out and exploring our yard to see if he could find something to eat, he ran off into the woods behind the house.
And lastly, I made chocolate cupcakes tonight. The cupcakes were from a box (we have several boxes left that I’m trying to work through so I can start making batter from scratch again), but the frosting was from scratch. It’s a chocolate frosting that wasn’t as light as a normal buttercream, but not as heavy as a fudge. Very delicious. I added the sprinkles for a little color…
I’ve been having fun lately playing with the different frosting tips we have. I’m not all that great decorating yet, but I’ve made it my goal to start working on decorating cupcakes. There is something so decadent about cupcakes when they are frosted properly. Yum!
Here is the recipe that I used tonight:
Recipe: Chocolate Frosting
2 oz. unsweetened chocolate
1/2 c. butter
3-5 TBS milk
3 1/2-4 c. confectioners sugar
1 tsp. vanilla
Using a small saucepan or the microwave, melt the chocolate and butter together. Remove from heat. Start mixing in the confectioners sugar 1 cup at a time using a hand mixer. When the frosting becomes thick, add in the vanilla and 3 TBS milk. Mix until the frosting is a good consistency (thick, but not solid-a good spreading consistency), adding milk and/or sugar as needed.
