I don’t drink a lot of coffee, but when I do it’s nice to every once in a while indulge in some biscotti. While looking about for recipes I found several recipes for biscotti and decided to give it a try, as many of my friends drink coffee and I thought that they might enjoy the cookies for a treat. I decided to make a vanilla biscotti with a semi-sweet chocolate coating.
Recipe: Vanilla Bean Biscotti
1 Vanilla Bean, split and seeded
2 3/4 c. Flour
1 1/2 c. Sugar
1 1/2 tsp. Baking Powder
1 tsp. Salt
2 egg yolks
3/4 c. butter, melted
Mix together flour, sugar, baking powder, and salt. Mix in eggs and egg yolks, and then melted butter and vanilla. Mix together until a dough forms. Divide into three sections, roll out to foot long coils and place on a greased cookie sheet (or a silpat) several inches apart (they spread quite a bit). Press down dough so that it is about an inch or so thick. Bake at 325 degrees for 10 minutes. Let cool, and then cut into 1 inch thick slices (diagonally if you want longer cookies). Place back on cookie sheet and cook for 10 minutes. Take out, flip cookies over, and cook another 15 minutes, or until biscotti is crisp. Cool.
Recipe: Chocolate Coating
6 oz Semi-Sweet Chocolate
2 tsp. Shortening
Melt in microwave at half power for 1-3 minutes, stirring as it melts. I put it in a coffee mug so that the chocolate level would be higher up in the container, and i would have greater dipping power. 🙂
Dip biscotti in chocolate, place on waxed paper or silpat until the chocolate has set. It will not release with ease until totally set (it took mine overnight). Enjoy!!
