I decided to buy a slow cooker the other day. After finding tons of recipes online for slow cookers, I thought it would be fun to start trying out. I’ve made some soups and stews before in the slow cooker, but nothing too crazy. I decided to get the 4 QT cooker, since we usually only have 2-6 people eating at a time, and I don’t ever plan on making entire meals out the crock pot, but just the main dish, or meat.
This recipe looked fantastic, so I thought I’d give it a go. We have started having dinner on the weekend with friends, which is perfect for a roast. After several hours of cooking on low, the house started to smell delicious and like caramelized parmesan. Fantastic.
The roast when it was done was amazing. I can’t believe how good it tasted considering all I did was throw it in the slow cooker before lunch and just let it do it’s thing until it was time to eat. The internal temperature was around 190 when we were finally ready to eat, but it was still moist and delicious. The roast literally fell apart when we went to cut it, and after dinner I pulled what was left with my fingers for leftovers. I am definitely making this again for a ‘quick’ and easy main course. Next time I am going to try it without the parmesan, since I couldn’t even taste any of it.
Recipe: Honey Parmesan Pork Roast
1 (2-3 pound) boneless pork roast
1 c. grated Parmesan cheese
1/3 c. honey
1/4 c. brown sugar
3 TBS soy sauce
2 TBS dried basil
2 TTBS minced garlic
2 TBS olive oil
1/2 tsp salt
Place the roast in the slow cooker.
Stir together the parmesan, honey, brown sugar, soy sauce, basil, garlic, olive oil, and salt into a bowl. Pour over the roast evenly. Turn the slow cooker on to low, and cook 7-8 hours, or until the internal temperature of the roast is 145 degrees (click for the USDA info here).
When the roast is done, transfer to a serving plate to rest. Serve with a side of mashed potatoes and a salad. We had some extra buns, and buttered those to go with dinner as well.
